The Chop Shop was founded in 2008 and is located in the sleepy little village of Unbong on the foothills of Jirisan Mountain. Our first butchery was built in 2010 where things slowly started developing into a business. Through trial and error we have developed our recipes and processes to what they are today with the first hundred Jamon hung to cure over 10 years ago.

In 2019 we will move into our new modern factory. Over the years we’ve gained more and more experience and our facilities have changed for the better. Our passion has stayed the same though. We believe in keeping things simple in order to showcase the natural qualities of our great ingredients. We are proud to use traditional methods to produce handmade small batch products.There is no rush at the chop shop because with time comes flavor.

Our Charcuterie program

Specially grown Berkshire pigs enter our butchery weighing in at 160kg each the larger size cuts are more  suitable for flavorful  charcuterie. Whole animal butchering ensures that we get the meat as fresh as possible and also have full control over breaking down the carcass. This way as we can monitor all the parameters to maintain the meat quality we require. We believe in enhancing the natural qualities of the ingredients themselves rather than overdoing it. We nurture the quality cuts with salt and time to produce the products our fine Berkshire deserves to be.

About our sausages.

Our sausages program is based on traditional sausages from around the world that we enjoy eating. We mix our own blend of spices at the butchery right before adding to the meat to make sure we get a consistent product. Our sausages are not an afterthought made from the unwanted off cuts. They are the original products that started of the chop shop on its journey to becoming what it is today. We use natural casings because it gives us the texture and snap that we are looking for. Chop Shop sausage is made with whole muscle meat and no fillers. We don't use artificial casings, no MSG and all natural spices to produce a premium product that we are proud to put our label on.

Berkshire K

Our association with the best pork in the country. Berkshire Korea is a very well known quality pork producer and we are fortunate enough to be a sister company. Just a stone’s throw away from our facility. We use their pork exclusively to make our charcuterie pork sausage and fresh cuts of pork. The Berkshire pig is an old breed that still retains the traditional characteristics of quality pork. The pig grows slowly and has beautiful dark red meat and white fat that is needed for the flavorful charcuterie we aim to produce. Berkshire K has a very detailed and well researched breeding program that is run by Doctor Park Hwa Chun.

About the quality cuts we sell at the chop shop.

Meat shouldn't all be treated the same. As butchers we should first completely understand the great number of parameters that determine meat quality. To name a few we start with PH and water holding capacity, marbling, meat color, animal breed, husbandry practices,  etc. This is all combined in the selection process when choosing meat for the case. Great meat doesn't necessarily start of great right from the carcass. Ageing at the correct temperature for the right amount of time is key for certain cuts. And knowing what to do with which part of the animal is what makes it a quality cut. At the chop shop we acquire meat from companies with a good and trustworthy reputation. We also thoroughly apply our own quality controls when breaking down the prime muscles or whole carcasses when they enter our shop.
